How would I send MIDI to a VST through multiple channels, like for something like Kontakt where you don't want multiple instances of it?

You mean multiple MIDI channels? There's two ways:
1. Right-click inside a track in the editor and select "Set MIDI channel".
2. Use the "MIDIChannelize" VST plugin from pizMIDI to set MIDI channel:

Oh yeah it really was that simple, I was overthinking it.

Although the virtual keyboard and playing with input edit off stays at channel 1. I can at least use jack-keyboard (or a physical MIDI keyboard) to a MIDI input if I need that. I'm not sure how to use the MIDIChannelize plugin because it starts giving me errors if i try adding that to a track.
